Chocolate covered berries

Sometimes you need a little extra with your fruit and it’s called C H O C O L A T E.
What about these chocolate covered berries in 3 vegan chocolate flavors? They are an easy, healthy snack rich in antioxidants, minerals and healthy fats.

I use strawberries, blackberries, raspberries and blueberries with chocolate made from raw cacao butter. The result is a deliciously rich, sweet-sour flavor combination.

Part of the nutrients in berries are fat-soluble, which means they can’t be properly absorbed by our body without the intake of fat.
Cacao butter contains plenty of healthy fats, so combining the berries with this homemade chocolate brings out their full nutritional power. Chocolate with benefits.

Vegan chocolate covered berries

 

Ingredients:

Dark:

1/4 cup / 60 ml melted raw cacao butter
1/4 cup / 60 ml coconut oil
1/2 cup / 50 grams raw cacao powder
1-2 tbsp maple syrup or coconut nectar
pinch of sea or himalaya salt

 

Mylk:

1/2 cup / 125 ml melted raw cacao butter
1/4 cup / 60 ml coconut oil
1/2 cup / 50 grams raw cacao powder
2 tbsp maple syrup or coconut nectar
pinch of sea or himalaya salt

 

White:

3/4 cup / 180 ml melted raw cacao butter
1/4 cup / 60 ml coconut milk
2 tbsp maple syrup or coconut nectar
pinch of sea salt or himalaya salt

 

2 cups / 350 grams berries:
strawberries, raspberries, blueberries and blackberries

 

Dark and mylk: Slowly melt the cacao butter au bain marie.
Separate the melted cacao butter in two bowls, one for the dark and one for the mylk chocolate.

Mix in the coconut oil and sweetener and stir well.
Add the cacao powder and a pinch of salt and stir until everything is dissolved.

 

Repeat the process for the white chocolate coating.
This chocolate will cool off faster because of the coconut milk.
You can slow down the cooling process a bit if you use room temperature coconut milk instead of chilled.

Dip the berries into the chocolate coating.
Put them in the fridge to set, then dip a second time and store in the fridge for at least half an hour.

 

These vegan chocolate covered berries are best eaten within a day or two and need to be stored in the fridge.
